Hi beet lovers! I’m still alive!
Wow it feels so weird and so good to be typing in this space again. This past semester gave me a nice big kick to the face. From absolutely crushing my advanced nutrition classes & research project, to having track absolutely crush me, to (literally) crushing my foot and being told I may not run again (!!!!!) life has been so all over the place. Good news though is that I survived and I’m still kicking.
To be honest, I haven’t really posted much because 1) I like/require sleep and 2) I have made like one new recipe this whole semester. But luckily that one recipe is FANTASTIC and I keep my freezer stocked with these burgers at all times. And they’re super simple to make so I have no excuse to not make up a giant batch of these to keep for weeks (or what I think will be weeks, until they actually all get eaten within a few days).
