Vegan Mystery Box Challenge: Coconut Quinoa Salad with Cranberries and Pistachios
Serves: 1 salad
- 1 cup coconut milk
- ½ cup quinoa
- 1T lime juice
- 2 cups romaine or spinach leaves
- Salad toppings: cranberries, pistachios, avocado
- Combine coconut milk and quinoa in a small pot. Bring to a boil then reduce to medium heat and allow to simmer until all of the milk has been absorbed.
- Add lime juice to quinoa.
- In a medium-sized bowl, combine lettuce, quinoa, cranberries, pistachios, and avocado.
