Today is a super exciting day because I’m teaming up with some other awesome vegan bloggers for the Vegan Mystery Box Challenge!
The Vegan Mystery Box Challenge was started by the wonderful Andrew of One Ingredient Chef and Sam of It Doesn’t Taste Like Chicken to showcase some yummy recipes all made with the same three ingredients: coconut milk, cranberries, and pistachios! How it works is that we were all given about a week to create our own unique vegan recipes featuring these three special ingredients, then all posts will go live at the same time. When I first got the info that these were the three ingredients we were to use, my first thought automatically went to quinoa. I had only tried coconut quinoa once before and I’ve always wanted to make it again – just waiting for the perfect recipe to try it with! Tossing this quinoa with some romaine and spinach leaves lightens it up to make a perfect appetizer or side salad. The addition of cranberries also adds a bit more sweetness, while the pistachios add that crunch that we all know and love in our salads. This salad is super easy and quick to make and also packs in a great amount of fiber and healthy fats!
- 1 cup coconut milk
- ½ cup quinoa
- 1T lime juice
- 2 cups romaine or spinach leaves
- Salad toppings: cranberries, pistachios, avocado
- Combine coconut milk and quinoa in a small pot. Bring to a boil then reduce to medium heat and allow to simmer until all of the milk has been absorbed.
- Add lime juice to quinoa.
- In a medium-sized bowl, combine lettuce, quinoa, cranberries, pistachios, and avocado.
